Head of Bakery

The Head of Bakery will spearhead the opening and daily operations of a newly established central production facility. Supplying a rapidly growing retail network, this greenfield role requires a hands-on leader to recruit, train, and manage a fresh team from day one. The primary focus will be standardizing production across cold dessert, while aggressively managing gross profit margins, wastage, and strict Standard Operating Procedures (SOPs).

Responsibilities:

• Recruit, onboard, and train a new kitchen team of 10-20 staff members from scratch, fostering a culture of high performance, collaboration, and strict hygiene.

• Oversee daily high-volume production of cold cakes, pastries and desserts, successfully scaling output to thousands of units daily.

• Develop and rigidly enforce standardized operating procedures (SOPs) for every step of production to ensure absolute consistency across all retail branches.

• Manage and track daily product costing, material wastage, and yield using spreadsheets to hit aggressive gross profit margin targets.

• Coordinate directly with the General Manager to establish facility workflows, manage equipment maintenance, and optimize ingredient procurement.

Requirements:

• Minimum 3 to 5 years of hands-on experience in high-volume commercial bakeries, central kitchens, or premium retail pastry operations.

• Strong leadership and communication skills to different stakeholders.

• Strong numerical and analytical skills; highly proficient in calculating food costs, managing inventory databases, and utilizing spreadsheets for wastage reports.

• Proven track record of managing, rostering, and training a kitchen brigade.

• Business proficiency in Mandarin is strictly required to facilitate direct reporting and daily strategy alignment with the General Manager.

• High emotional intelligence (EQ) with a collaborative, data-driven approach to problem-solving.
